Interfacial and surface tension (Kruss tensiometer)
Interfacial and surface tension corresponds to the repulsion tension between water and oil and water and air. Proteins can reduce the tension between these phases because of their amphiphilic nature. Surfactants are used in food systems (emulsions, foams) and no food systems (detergents, soaps).
