Infogest is an international consortium of 440 scientists from 150 institutes in 45 countries. One of its realisation is the definition of a harmonised in vitro digestion model. It can be combined with SE-HPLC to follow peptide generation, SDS PAGE to study which proteins are digested and degree of hydrolysis.
