When a powder is added to a water container, it may either cross easily the air / water interface or accumulate above water. Powder wettability corresponds to the time required for the powder to cross the air / water interface without stirring. Wettability is important for instant beverages, but also when the powder is used in a process. Powder wettability may be improved by adapting particle size and shape.
