Trypsin inhibitors are proteins or peptides which inhibit the activity of trypsin and reduce protein digestibility. They are present in pulses and cereals. The two most common trypsin inhibitors are two peptides, the Kunitz inhibitor and Bowman-Birk inhibitor. Trypsin inhibitors content is obtained by measuring the reduction of enzymatic activity of trypsin.
