Texture Profile Analyser is used to caracterise a protein gel or a finished product when submitted to large deformations. A cube is cut in the gel or finished product. Texture Profile Analyser applies two successive deformations to the sample. The force, elasticity, cohesion and adhesion of the sample is measured. This technic can be used to mimic chewing action.
