The gelling properties are evaluated by applying a temperature kinetic (heating step followed by cooling step) and measuring G’ and G’’ moduli by the rheometer. The results are expressed by graphs representing the evolution of G’ and G’’ moduli according to temperature kinetic. The resulted parameters are:

• Gelling temperature.
• Gel strength.
• Gelling test during acidification.
• Gel analysis by Texture Profile Analysis.
