Viscosity
The rheological behaviour of a product corresponds to its flowing properties. The rheological behaviour of a product is measured with a DHR-2 rheometer. Viscosity is calculated by the ratio between shear strain and shear rate. The rheological behaviour of a product and its viscosity are important for its perception by the consumer (thickness, mouthfeel). This parameter is also important for process units (pumping, mixing, spray-drying).
